PSL Jello Shots!

This post is dedicated to my fall obsessed, PSL loving friend, Jessica. When the weather creeps down to just cool enough for a sweater and boots she is fully committed to the season. I mean who can blame her? Bonfires, football, chili, soup, flannels, sweaters, hats, and of course the gorgeous changing leaves. Her birthday happens to fall right in the middle of the season so we try to go (f)all out for her with a trip to the mountains and a classic autumn theme! Pumpkin spice just happens to be her favorite so for our girl's trip to Boone one year we made her mini PSL Jello Shots! Not only are they delicious but they're so cute.

Ingredients (makes 20 servings):

  • Clear plastic shot glasses

  • 2 cup of Coffee (I chose to go with a fall flavor like caramel coffee)

  • 2/3 cup of Heavy Cream

  • 2 packet of Gelatin (Knox brand is great. Do not buy regular Jello!)

  • 1 & 1/3 cup of Kahlua

  • 4 tsp Pumpkin Spice (plus a little extra to sprinkle on top!)

  • Green Plastic Straws (cut down to size)

  • Whipped Cream (for garnish)

Recipe:

  1. In a small pan heat coffee and bring to a boil. Turn off the heat, stir in the gelatin and mix well.

  2. Add in the Heavy Cream, Kahlua, & Pumpkin Spice and whisk until fully blended.

  3. Layout 20 shot glasses on a baking sheet or some flat surface that can fit in your fridge.

  4. Divide the mixture into the shot glasses then cut the straws to the appropriate height and insert them into the cups.

  5. Set the shots in the fridge and cool until set. (This will take about 1-2 hours.)

  6. Once your shots have set, garnish with whipped cream and sprinkle a little Pumpkin Spice on top.

  7. Consider serving on a rustic stand for full fall effect!

**You can set the Jello shots a night or so before serving and save step 6 until you're ready to serve!
