Here is a tried and tested recipe that even the pickiest eaters will enjoy! The recipe is very easy and a great way to use up bananas that are browning, or bread that is getting a little stale. This recipe should make about 10 smaller muffins, or 8 larger ones.

Ingredients:

  • 4 slices of bread, cubed

  • 1 large banana, mashed

  • 2 eggs

  • 1/2 cup milk

  • 1 tsp vanilla extract or paste

  • 1 tsp ground cinnamon

  • fruit to garnish, optional

  • powdered sugar to garnish, optional

Tools:

Recipe:

  1. Preheat oven to 350' F

  2. Lightly grease your muffin tin

  3. Cube your bread

  4. In a shallow bowl, mash your banana until it is smooth and lump-free

  5. Add in the two eggs, milk, vanilla extract, and cinnamon and mix with the mashed banana until fully incorporated

  6. Take your cubed bread and toss in the banana-egg mixture until all pieces are coated evenly. If you want to add fruit before you bake, like blueberries or strawberries, add them to the mixture and stir.

  7. Spoon your French toast cubes into the greased muffin tin.

  8. Bake for about 25 minutes, or until brown and crispy.

  9. Let cool for about 5 minutes

  10. Top with freshly chopped fruit (optional) and sifted powdered sugar (optional) and enjoy!
