Egg Roll In A Bowl
Updated: Oct 5
My mom & I started Beachbody's 21 Day Fix this week so I needed to come up with some healthy, easy recipes that met the guidelines of the diet. This dish is a great way to satisfy your cravings for Asian food but much better for you! I swapped out the typical pork for a healthier turkey option, swapped soy sauce for coconut aminos, and left off the carbs but boy is this satisfying!

INGREDIENTS:
1 lb Ground Turkey
1/2 Head of Shredded/Chopped Green Cabbage
1/2 cup shredded Carrots
3 Cloves Garlic, Diced
2 tsp Fresh Ginger Puree or Diced Ginger
2 tbsp Olive Oil
1 tsp Red Pepper Flakes (optional)
Salt (to taste)
1 tsp Black Pepper
1/8 cup Coconut Aminos
Optional:
Wonton Strips
Sriracha
Chopped Scallions
RECIPE:
Heat large skillet over medium heat and add olive oil to pan. Add ground turkey and cook until browned.
Once turkey is cooked add seasonings (salt, pepper, garlic powder, onion powder, red pepper) and stir until mixed.
Add shredded carrots, garlic, ginger, and cabbage. Cook for 5-10 minutes until vegetables are soft.
Add coconut aminos to pan and stir until fully mixed.
Top with additional garnishes and enjoy!
Makes about 6 servings.
