This dish is one of my mom's staple crowd pleasing dishes. It's not too spicy but is packed with flavor and vibrant colors.

Ingredients:

  • 1 lb Ground Chicken

  • 2 tsp Fresh Ginger- Minced

  • 1 Clove Garlic- Minced

  • 1/4 tsp Red Pepper Flakes

  • 3 tbsp Soy Sauce

  • 1/2 Bottle of "House of Tsang Bangkok Radang Peanut Sauce"

  • 1 tbsp Corn Starch

  • 2 tbsp Peanut Oil or Vegetable Oil

  • 1/3 cup Water Chestnuts- Finely Chopped

  • 1/3 cup Green Onions/Scallions (Sliced Thin- for garnish)

  • 1/4 cup Chopped Peanuts

  • 12 Large Lettuce Leaves such as Boston or Romaine Lettuce

  • Sesame Seeds (for garnish)

Recipe:

  1. Combine the chicken, ginger, garlic, and red pepper flakes together in a medium bowl

  2. Blend the soy sauce and corn starch together in a cup or small bowl until smooth

  3. Heat the wok or skillet over medium-high heat. Add the peanut or vegetable oil and heat until it is hot.

  4. Add the chicken mixture and stir fry for 2-3 minutes (or until the chicken is no longer pink, breaking it up as you stir.)

  5. Stir in the soy sauce mixture and mix well to ensure the chicken is coated. Add in the 1/2 bottle of peanut sauce and stir.

  6. Add in the chopped peanuts, water chestnuts, and green onions. Heat thoroughly.

  7. Divide filling evenly among lettuce leaves and roll up to eat. Garnish with scallions and sesame seeds (optional).

  8. Enjoy!
