If you've ever met my family, you know my dad is not afraid to try recipes from any cuisine. He is particularly obsessed with Asian food and has recently become obsessed with Seonkyoung Longest and her cooking videos. Over the past few months he's shared a few of his favorites with me, starting with this one! While most of these ingredients are staples in your household, some are a bit more specialty and can be subbed out if you struggle to find any.

Bulgogi is a Korean dish that usually features a meat (pork, ground beef, ribeye, etc.) and tends to be a little sweet, a little savory, and can be topped with Gochujang (Korean spicy paste similar to a BBQ sauce) for a kick!

I recommend you start this recipe the night before (or first thing in the morning as it needs to marinate 30 min to overnight.

INGREDIENTS:

  • 1 lb thinly sliced beef (rib eye, skirt, chuck, etc.)

  • 1/2 of one large onion (thinly sliced)

  • 5-6 cloves of garlic (diced)

  • 3 tbsp of soy sauce (the best quality you can find)

  • 2 tbsp of mirin

  • 2 tbsp of rice wine (If you do not have rice wine, substitute out the mirin & rice wine for a dry red wine.)

  • 1 tbsp sesame oil

  • 5 green onions (cut into 1 inch pieces)

  • 2 tbsp cooking oil

  • 2 tbsp sugar

  • 1 tbsp maesilaek (Korean Plum Extract or Sauce- You can also substitute 1 tbsp ground asian pear or fuji apple if you can't find the plum sauce or even apricot jam)

  • 1/2 tsp black pepper

  • 1/2 tsp salt

  • Gochujang (garnish- optional)

  • Jasmine Rice/Brown Rice (optional)

  • Lettuce for Lettuce cups (butter or bib- optional)

  • Sesame Seeds (Optional)

  • Kimchi (optional)

RECIPE:

  1. In a large mixing bowl combine the soy sauce, mirin, rice wine (or substitute), plum extract (or substitute), sesame oil, and sugar in a bowl

  2. Add in garlic, onion, beef, and green onions and mix gently by hand or tongs. Cover & marinate 30 minutes to overnight.

  3. Heat a large skillet over high heat and add cooking oil to pan. Add marinated beef & vegetables to the pan and cook 7-9 minutes (or until fully cooked.) You can also cook over a grill by using a baking rack.

  4. Serve immediately over rice or lettuce. Top with sesame seeds, gochujang, kimchi and enjoy!

Guchajang is not optional...lol I like to add other veggies like broccoli, a sweet red pepper and maybe a cherry pepper or two. The guchajang past also makes the dish much deeper red in color for a colorful option. Enjoy!
