Low Carb Asian Chicken Stir Fry!
Updated: Oct 2
When I was doing the Keto diet a while back I discovered these low carb noodles that saved me from the boring routine of just meat and veggies. Shirataki noodles are made of a flour derived from the konjac plant and have little to no carbs or calories. They're called the "miracle noodle" for a reason! They also make this flour into a rice substitute and thinner/thicker noodle shapes for a variety of options. I really enjoy them when I'm doing low-carb as they're the closest thing to a noodle I've found. This dish features these noodles in a quick & easy and super healthy stir fry!

This dish can be customized to your liking and substituted out so many ways. The basic components are stir-fry with noodles, meat, and veggies. Pick your favorite protein and veggies and garnishes and enjoy!
INGREDIENTS: (Serves 2-4 people)
2 packs of Shirataki Noodles
1 lb of chicken (pound chicken flat and cut into thin bite size strips) or beef (skirt steak, ribeye, etc. cut into thin strips)
2/3 cup of shredded carrots
2/3 cup of shredded cabbage
1 cup of broccoli (cut into bite size florets)
1 cup of shitake mushrooms (thin sliced)
2 cloves of garlic (diced)
3 tbsp of soy sauce
1 tbsp of sesame oil
2 tbsp of cooking oil (peanut/olive/grapeseed)
2-3 dashes of fish sauce
1-2 tbsp of Sambal Oelek (thai chili sauce)
1 tsp of white pepper
Black Sesame Seeds (for garnish)
Green Onion (thin sliced, for garnish)
Sriracha (optional for garnish)
RECIPE:
Follow cooking instructions for Shirataki Noodles and set aside
Heat cooking oil in a wok or pan over medium-high heat and when hot, add chicken (or beef). Cook for 5-7 minutes (or less for beef for Med. Rare). Once chicken is close to cooked through add the garlic & other vegetables to the pan & mix well.
In a small mixing bowl add soy sauce, sesame oil, fish sauce, Sambal Oelek, & white pepper. Add wet ingredients to the wok and mix veggies & meat well.
Once the vegetables and meat are cooked through toss in the Shirataki Noodles. You may need to cut the noodles up a bit to get it thoroughly tossed together.
Serve immediately and garnish with sesame seeds, green onions, and Sriracha. Enjoy!
